Vanilla & Chocolate Weetabix Tiramisù

Ingredients:
3 Celestial Seasonings Vanilla Rose tea bags
1 1/4 cups boiling water
3/4 cup sugar, divided
2 cups Brown Cow nonfat plain yogurt
1 cup mascarpone cheese (8 oz.)
1 tsp. vanilla extract
12 Weetabix biscuits
1/4 cup grated chocolate
1/2 cup chocolate shavings
Directions:
In a heatproof measuring cup, combine the tea bags, boiling water and 1/4 cup sugar. Steep for 10 minutes,then discard tea bags.• Meanwhile, in a large bowl, beat the yogurt, mascarpone and vanilla with an electric mixer until creamy. Add the remaining 1/2 cup sugar and mix until it’s blended.
• Line the bottom of an 8-by-8-inch baking dish with half the biscuits. Drizzle with half the brewed tea. Spoon on half of the yogurt filling. Sprinkle with grated chocolate. Top with the remaining biscuits. Drizzle with the remaining tea and top with the remaining yogurt filling. Cover and chill for at least 20 minutes.
• Before serving, sprinkle with chocolate shavings.
Yield: 12 servings

This version of tiramisù is very simple to make and surprisingly healthy. We’ve substituted Weetabix biscuits for less nutritious ladyfinger cookies found
in most traditional recipes, Celestial Seasonings vanilla tea for the espresso and brandy, and nonfat plain Brown Cow yogurt for the eggs.
