Weetabix Lemon Blueberry Muffins

Makes 12 large muffins.

4 Weetabix biscuits, crushed
1-1/4 cups unbleached flour
2 tsp. baking powder
1/4 tsp. salt
Grated rind of 1 lemon
1/3 cup butter
1 cup dehydrated cane juice or sugar
2 eggs
2/3 cup milk
1-1/2 cups fresh or frozen blueberries

1. Preheat oven to 400°. Grease muffin cups, or use paper baking cups.

2. In a large mixing bowl combine crushed Weetabix, flour, baking powder, salt and lemon rind. Set aside.

3. In a separate bowl, cream butter and sugar until fluffy; beat in eggs, one at a time.

4. Stir wet ingredients into dry ingredients, adding milk with each spoonful.

5. Gently stir in blueberries just until combined.

6. Scoop batter into muffin cups, filling to top.

7. Bake 20- 25 minutes, or until golden brown and firm to the touch.
